In my determination to make some decent food, I stumbled across vegweb.com, a vegan cooking website.
In spite of my daughter waking up about 10 times, I managed to throw together some Mac and "cheese" and a black bean and quinoa salad. Yum!
The ideas on that website are great. I had no idea that blended cashews can make sauces or that there are so many alternatives to eggs. :)
