Success!

In my determination to make some decent food, I stumbled across vegweb.com, a vegan cooking website.

In spite of my daughter waking up about 10 times, I managed to throw together some Mac and "cheese" and a black bean and quinoa salad. Yum!

The ideas on that website are great. I had no idea that blended cashews can make sauces or that there are so many alternatives to eggs. :)

Food blunders

Here's an update since I haven't posted in a while:

I cleaned out our pantry (and discovered a mini food processor in the process!). It seems rather empty now that I'm not buying many processes foods, but it's getting there.

I've broken down twice and we've ordered pizza :S but I'm attempting to stick with this. My cooking so far leaves a bit to be desired...but I'm hoping that improves with time and practice.

I've steamed a lot of veggies and made a lot of rice. Abe tries it all, but generally ends up dousing it with soy sauce due to "lack of flavor."

I've been trying to remedy this through learning different sauces. I made a spicy tahini...it was okay, but pretty dry. I also tried a peach BBQ sauce recipe I found. That was pretty decent, but really sweet. I guess I need to just keep reading

First cooking attempts

So tonight I tried my hand at cooking some whole foods. I made some quinoa, rainbow chard cooked in olive oil and garlic, with a side of grapes.

Not the best in the world, but decently tasty :)

First things first...

This process will need to start with some research on my part (mostly because I'm going to have to relearn how to cook and grocery shop).  I'm also going to have to figure out how to find time to make food (and time isn't something always super available with an infant in the house). 

I guess it's time to dust off the ol' crock pot, invest in a food processor (which I was going to do anyway for little one's baby food when she starts eating in a couple months), and scour the internet and our cookbooks for some recipes.  

The Adventure Begins...

So last night my husband and I watched "Forks Over Knives." 

(Well, I watched most of it until our daughter woke up and needed to be fed, but I finished it in the morning.)

Anyways...this has inspired me to take the leap and start our family on a whole foods diet.  The problem is, I only sort of know how to go about this, so, I'm going to use this blog to document the process in the hopes that if someone chooses to try this in the future, maybe it will be helpful. 

A big reason that I want to do this now is for our daughter.  If she grows up eating this way, it will be second nature to her and she will likely be healthier and happier than she would have otherwise been.  So little lady, if you read this someday when you're older, this if for you :)
